Garlic Harvest Begins at Birchfield Farm – Here’s What You Need to Know

We’re thrilled to announce that garlic harvest begins this Monday here at Birchfield Farm!
The fields are ready, and our Music and Svea garlic are just about perfect—full of flavor and ready for the next phase of their journey from our soil to your kitchen (or garden!).
What Happens During Garlic Harvest?
Harvesting hard-neck garlic is a hands-on process that we love. We start by gently loosening the soil around each plant and pulling the bulbs out by hand. Once harvested, we clean off any excess dirt and prepare the garlic for curing.
Curing is a crucial step that takes place over several weeks in a dry, shaded, and well-ventilated space. During this time, the garlic dries down, concentrating its flavor and getting it ready for storage, braiding, or planting. It’s a beautiful sight—and the smell is incredible!

Not Sure Which Variety is Right for You?
We grow two hard-neck garlic varieties here at Birchfield Farm: Music and Svea. Both are flavorful and beautiful, but they each have their own unique characteristics.

🎵 Music Garlic 🎵
Look: Large, full cloves with white to rosy skins
Flavor: Rich and bold; slightly sweet when roasted
Perfect for: Roasting, sautéing, and fall planting (excellent cold-hardy variety)
Why We Love It: Easy to peel and stores beautifully

🧄 Svea Garlic 🧄
Look: Smaller cloves with striking purple striping
Flavor: Spicy when raw, mellow-sweet when cooked
Perfect for: Raw dishes and cooking that calls for a garlicky punch
Why We Love It: It’s a unique heirloom variety from Sweden—less common, incredibly flavorful, and always a hit with our food-loving friends
